Comfort Couscous

Today I found a big container of Organic Whole Wheat Couscous at the store. I had never realized couscous was semolina wheat--I always thought of it as a rice or corn product (there are other grain products labeled as couscous made from barley, rice or corn), but traditionally it is wheat. Anyway, I was feeling achy and yucky from an on-coming cold/flu and for some reason a big bowl of couscous w/ veggies sounded sooo good and comforting. So that's what I made for dinner--my dinner. The kids had pizza, but whatever.
Comfort Couscous (or Couscous & Zucchini)
1 cup couscous
1 Tbsp olive oil
1/2 small onion, small diced
1 small zucchini, diced
1 clove garlic
1/4 tsp red pepper flakes
1/2 Tbsp mint leaves, sliced thin
salt

1. Cook couscous in small saucepan according to directions (mine called for 1 1/4 cup water, 1/4 tsp salt and 1 tsp butter).
2. In large saute pan, heat oil. Saute onions until softened. Add zucchini, garlic, red pepper flakes and desired salt. Cook until tender.
3. Fluff couscous with fork and add to vegetables. Remove from heat, add mint and toss to combine.
