Bean Burgers

Day 3: My friend Robyn, who is all-knowing in the realm of health and fitness, posted this recipe for bean burgers a few months ago and I was excited to try them. I cooked them on a griddle, but I think they would have done better pan-frying. Nate and I liked them with Sweet Chili Sauce (Nate probably couldn't have eaten it without the sauce) and the girls, of course, put ketchup on top. Sidney liked the burgers best of everyone--probably because they were a little mushy, just as she likes :) I served them with a salad and grilled pita bread--yummy.

Bean Burgers
1 can Cannellini Beans – rinsed and drained
Oil Spray
1 Onion – finely chopped
2 Cloves Garlic – finely chopped
1 Tsp Ground Cumin
1 Zucchini – grated
1 Carrot – grated
1 ½ Cups Bread Crumbs
2 Tsp Olive Oil

Method:
1. Mash beans
2. Cook garlic and onion in frypan until soft, stir through cumin
3. Add zucchini, carrot and breadcrumbs. Mix with beans and form into balls.
4. Refrigerate for about an hour
5. Cook in oil for 3 mins on each side until heated through.
6. EAT ME!!

Serve with:
Turkish Bread, wholegrain bun, toasted bread, pita, wrap
Mixed Salad Leaves, arugula, spinach
Tomatoes
Ketchup, or Sweet Chilli Sauce (which is also good added to the mix)

we were just looking at the bean burger picture and Anna said "what is that yucky food?" it was hilarious. Looks good to me!

That's so funny--you might have a harder time getting Miss Anna to eat a bean burger than I did with the girls. They don't ever ask, "what is it?" they just ask, "does it have tomatoes in it?"

YUM! I think that looks delicious! I am so impressed by how well you are doing with this health revolution. It takes a strong and determined mother to stick with it. Your kids will thank you for it (and I bet your Dr. will too b/c you WON'T be seeing him/her anytime soon!) I am now craving those burgers. It's 5:21 and I have no idea what I am making tonight. Good thing it's a fast fix!
