Asparagus Frittata with Spinach Salad

As is usually the case, I decided what to make for dinner based on what was just "hanging out" in the fridge. I had a small bunch of asparagus, a large sweet potato and a half bag of spinach. Okay then--Asparagus Frittata with Spinach Salad it is! I did the same as the Sweet Potato Frittata except instead of the green pepper, I cut up the asparagus into small pieces (and saved the tips for garnish--which I boiled in the microwave for a minute or so). And I didn't add any herbs. I also topped it with Parmesan cheese the last few minutes of baking. So I think I've proved that this recipe can be adapted to anything you have hanging around--well, almost anything :) And for the salad, I did a quick variation of this honey-mustard dressing recipe. It was quick and yummy--my two favorite things.
Spinach Salad with Honey-Mustard Dressing
1 bag baby spinach
1 can mandarin oranges
2 green onions, sliced
1/2 bottle bacon pieces
handful chopped pecans (optional)
dressing:
1 clove garlic, minced (I just used a little garlic powder)
2 Tbsp white or cider vinegar
2 Tbsp. honey
2 Tbsp Dijon mustard
1/2 tsp. ground pepper
1/4 cup salad oil (I just used about 2 Tbsp)
