Man, oh man. I've had a hard time cooking lately. Let's just say that pregnancy and meal-planning do not go hand-in-hand. In fact, I don't want to think about food--at all. So, needless to say, everyone's been fending for themselves around here lately. Finally, last week I had had enough of cold cereal and frozen food and decided to brave the nauseating world of making dinner. It was rough, but totally worth it. I missed real food. Real food is good--real good. But since I didn't want to think to hard about it, I relied on some old stand-byes:

Southwestern Tabbouleh Salad w/ Grilled Chicken
And tonight, I decided on something I haven't made in a long time--Chicken Cacciatore. I'm so glad I pulled out this old recipe (I have a couple, but this one has the most veggies). It was easy, one-pan, and fabulous-o!
Chicken Cacciatore
1 onion, small diced
1/2 red bell pepper, small diced
1/2 green bell pepper, small diced
1/2 lb mushrooms, sliced
1 or 2 chicken breasts, cut into small pieces
1 tsp dried basil
1 tsp dried oregano
garlic powder
1/2 tsp salt
1/4 tsp black pepper
2 or 3 chicken sausages, sliced
1 can diced tomatoes
1 can great northern beans, drained and rinsed.
1/4 cup milk (more if needed)
large handful spinach, torn into small pieces
mozzarella cheese, grated
Parmesan cheese, grated
1. Marinate cut chicken in 2 Tbsp olive oil, 1/2 tsp basil, 1/2 oregano, garlic powder, 1/4 tsp salt and pepper.
2. Heat 2 Tbsp olive oil in large saute pan. Add onions and peppers, saute until slightly tender. Add mushrooms. Saute until browned. Add remaining basil, oregano, salt and pepper.
3. Add chicken to pan. Saute a couple minutes. Add sliced sausage. Saute until browned.
4. Add tomatoes w/ juice. Cook until chicken is cooked through.
5. Add beans, milk and spinach. Heat through until spinach is wilted.
6. Top with cheeses. Serve with sliced baguette.
