Alright, I'm not claiming to be officially back in the veggie blogging business (I enjoyed the vacation from my self-imposed menu-planning responsibility a little too much) but I did want to make note of a couple quick summer dinners we have had. One thing I have missed since my blogging hiatus (besides the benefit of eating better) has been a record of what we actually ate over the last month. My dinner plans are always so fly-by-the-seat-of-my pants, that I can never remember what we ate from one day to the next--and if it was actually something everyone enjoyed, I forget that as well. So I need to get back to blogging if for the sole reason of keeping track of my sort-of-made-up recipes. Here's a couple of favorites so far:
Spinach & Broccoli Salad w/ Ham
adapted from Kami's recipe for Spinach Tortellini Salad (posted here) which I have made and loved, but this time I didn't have any tortellinis on hand.
Spinach, cut or torn into bite-size pieces
Broccoli, cut into bite-size pieces
Feta, crumbled
Ham, small diced
Sliced olives, drained
a little Creamy Ceasar dressing (a little goes a long way)
mix all ingredients together. serve with a whole wheat roll or a yummy baguette.
Grilled Veggies & Sausage w/ Rice
sliced and grilled Chicken&Apple Sausages from Costco (I also love the Spicy Mango Sausages)
sliced and grilled zucchini coated w/ olive oil, salt and pepper, and brushed with Italian dressing (can used whatever grilled veggies you like)
Serve with brown rice w/ green onions and a little Italian dressing.
Easy as that!
