Perfect Peanut Butter Cookies Perfected

I found this recipe for Perfect Peanut Butter Cookies and you'd think I would learn to leave well enough alone--why mess with "perfect" right? But of course I couldn't help myself but to tweak the recipe a little...just a little...that's all. Yep, they're perfect all right. Perfectly delicious.

My Perfect Peanut Butter Cookies

1/2 cup peanut butter
1/2 cup butter (I used 1/4 cup butter and 1/4 cup applesauce--you know me, I can never use the full amount of butter ;))
1/2 cup sugar
1/2 cup brown sugar
1 egg
1/2 tsp vanilla
1 1/4 cups flour (I used 1/2 cup whole wheat flour and 3/4 cup regular flour--I actually used almost 1 cup regular flour because the dough seemed too sticky)
3/4 tsp baking soda
1/4 tsp salt

Thoroughly cream butter, peanut butter, sugars, egg, and vanilla. Sift together dry ingredients; blend into creamed mixture. Shape into 1-inch balls; roll in granulated sugar. Place 2 inches apart on ungreased cookie sheet. Crisscross with fork tines. Bake at 375 degrees for 7-9 minutes. Do not overcook ... take them out when they are barely golden. Makes about 30 cookies (mine made only about 24). ***Also great with crunchy peanut butter.

**Warning: you will eat more than one at a time. Don't try to control yourself...it's useless. Just give in to the power of the peanut butter goodness.
