I'm not a big dessert person, and I'm definitely not a baker (not that I don't like dessert, I just don't like to make it). But I have been on the lookout for a healthy cookie recipe--I've been wanting to use my whole wheat flour. I found this recipe on
www.recipezaar.com and liked that it had whole wheat flour AND that it used applesauce instead of shortening or butter. Trust me, I was not expecting them to look or taste just like real oatmeal cookies, but I was intrigued. Nate suggested (of course) we put chocolate chips in half of the batter and raisins in the other half. They did end up looking a little funny and were more chewy than a normal cookie--they reminded me of those Quaker breakfast cookies you can buy at the store. But we liked them, even the raisin ones :) A nice, feel good treat.
Healthy Oatmeal Raisin Cookies1/2 cup brown sugar
2 egg whites (I just used one egg, I'm not THAT hardcore, yet)
2/3 cup applesauce
1 teaspoon vanilla
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
(optional)
1 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
1 1/2 cups old fashion oatmeal
2/3 cup raisins
1/2 cup walnuts (optional)
Directions
- Mix brown sugar thru vanilla together.
- Add flour, soda, salt, cinnamon, nutmeg.
- Stir in oatmeal, raisins& walnuts.
- Drop on cookie sheets which have been sprayed or I use parchment paper.
- (flatten with fork) Bake in 350 oven for about 10 minutes. Enjoy!
