Weekend Leftovers

We had leftovers this weekend--yummy, I know. Nate hated leftovers when we first got married and would never eat them (he would open the container out of the fridge and smell it, which of course is going to smell gross, duh.) But he has gotten much better at eating leftovers--maybe it's because he knows there isn't anything else to eat :)
Saturday night I used the leftover spanish rice to make taco salads. We added lettuce, crushed corn chips, lite sour cream, salsa and that "Wholly Guacomole." The salad tasted just like a Bajio salad--I think that was mostly due to the Wholly Guacomole (it's good stuff).
Sunday I made some more brown rice which we had with the rest of the vegetable curry. This time I added cashews and that was delish. Sarah and Joel commented that they had made the same recipe this last week too and it was not so good--their Southern tastebuds are just not as refined as ours, I guess :) Actually, since it as more of an Indian curry taste, I can understand not loving it. But our little Chickpea cannot get enough of it.

True about the Southern tastebuds---all we can eat is BBQ now. :) I am loving all of these recipes you have here!!! One of these days when I get around to cooking I want to try all of them!!!
