Tuna Patties

Maybe I should declare this week to be "Meatless Burger Week." Tonight we had Tuna Patties with Roasted Sweet Potatoes and Spinach. I found this recipe in the Kraft Foods magazine but changed it just a little--instead of adding 1/3 cup mayo, I used 2 egg whites (an idea from the Black Bean Burger recipe). I then topped the patties with a little mayo mixed with fresh squeezed lemon juice, a little sugar, garlic powder and minced parsley. The little bit of lemon really added to it.
Tuna Patties
2 cans tuna
1 pkg (6 oz) Stove Top Stuffing
1 cup shredded cheese
1/2 cup shredded carrots
1/3 cup mayo (I used 2 egg whites instead, or 1 egg)
2 Tbsp. pickle relish
3/4 cup water

Mix ingredients together. Refrigerate for 10 minutes.
Use about 1/3 cup mixture to form each patty. Cook for 3 minutes on each side until browned.
