Kugeliciousness with Apples

I've been on a potato-craving rampage lately--good thing Thanksgiving is only a week away. But until then, I thought I'd give some Potato Kugel a try because hey, it's Kugel--it's festive, it's fun to say, and it's tasty to eat. This recipe is from my Moosewood Restaurant cookbook, so I had a feeling it wouldn't disappoint--and it didn't. I served it with a green salad tossed with sauteed onions and red peppers (much to Camden and Riley's dismay). I then topped the Kugel with sour cream and served homemade applesauce on the side. Oh baby.
Potato Kugel
5 medium potatoes (2 1/2 lbs), peeled if desired
2 medium onions
4 eggs
1 tsp salt
black pepper to taste
1/4 cup matzoh meal or bread crumbs
1/4 cup vegetable oil (I'm sure butter would be delish, of course)

1. Preheat oven to 350 degrees.
2. Coasely grate the potatoes. Place in colander and squeeze out as much water as possible.
3. Grate the onions. Beat the eggs in a large bowl. Add the potatoes, onions, salt, pepper, and matzoh meal. Mix well.
4. Put the oil in a 9x13 inch baking pan and place it in the hot oven for 5 minutes. Pout the hot oil into the batter, stirring just a little, and then pour the batter into the hot pan. This procedure makes the kugel crusty.
5. Bake for 1 hour or until lightly browned.

Homemade Applesauce
4 or 5 apples, peeled, cored, and small diced
1/2 cup water
2 to 3 tsp sugar
1/2 tsp cinnamon

Bring apples and water up to a boil. Add sugar and cinnamon. Reduce heat and simmer until tender, stirring occasionally.
I just kind of threw this together--I'm pretty sure you can't mess it up. Season to taste :)
